Wago's selection course starts with ``anpan'' made with domestically-produced red bean liver, cooked to a soft texture, and paired with charcoal-grilled white bread chopped Narazuke and green onions for an exquisite accent.
Food Another specialty “walnut mochi”
The last part of the selection course is another specialty, ``walnut mochi.'' A soft handmade gyuhi cake filled with dried date filling and crunchy walnuts without sugar. Enjoy it with authentically brewed Taiwanese oolong tea.

After graduating from culinary school, he began his career as a chef at Hotel Okura Tokyo's Yamazato.He studied creative Nakada cuisine under Mr. Nakata at Gentoushi Nakada in Motoazabu.In 2013, at the age of 29, he moved to Ota Ward, Tokyo. Opened “Kojiya Wago” in Kojiya. Opened “Ginza Wago” in February 2020 based on about 7 years of experience.
