銀座にある鮨屋「青海」
2か月ぶりの訪問です。
先ずは生ビールを頂きます。
最初の一貫はボストンマグロの中トロ。
前回はニュージーランドが比較的良いということでしたが、今回はボストンマグロも良いようです。
脂と旨味のバランスが良い握りでした。
前菜五品
贅沢なキャビアご飯も良いですが、モズク酢にトマトを和えたものが酸味や食感が良くて楽しめました。
カツオ
ここのカツオは不思議なうまさがあります。
生姜じゃなくて山葵が添えられているのも良いです。
雲丹9種の食べ比べ
本日は、
紫雲丹:利尻・中国・苫小牧
馬糞雲丹:噴火湾・中国・利尻
塩水雲丹:岩手・利尻・函館
中国産を2種類食べられるという面白い食べ比べでした。
中国産と言ってもピンキリでしょうが、ピンのものだったのでなかなか美味しかったです。
日本酒は雲丹に合わせて黒龍の「龍」
エレガントでフルーティーな味わいは雲丹にマッチします。
黒むつ塩焼き
日本酒は作Z、シンプルなデザインのラベルです。
前回に引き続きイシガキガイを頂けましたが、とにかく絶品。
風味や食感がたまりません。
しんこ
新子と呼べる最後の最後。
日本酒は鄙願
食事の邪魔をしない名脇役の日本酒です。
白エビとあん肝の茶碗蒸し
赤身に大トロ・シマアジなど、どれを食べても相変わらず美味しかったです。
ここの大将の握りをまた食べに来たいと思います。
