At our restaurant, we mainly use fresh and plump toppings such as yellowtail and sweet sea bream. On the other hand, the conger eel, which melts in your mouth, is a specialty. In addition to researching the production area and size, we rely on brokers to obtain delicious conger eel, which has a grass-green abdomen, which occurs at a rate of 1 in 100. The sauce is a treasure that was given to us by the master that the owner studied under, and we still use it to this day. Also, the rice is Sasanishiki from Miyazaki, which goes well with vinegar. We are particular about using small grains of old rice that have been drained of moisture, and will fall apart when you put them in your mouth.

We are also proud of the dishes that take a lot of effort, such as carefully deboned blanched conger eel and seared dried bonito smoked with straw. For grilled dishes, we dry Kinkiya Nodoguro to condense the flavor, and then remove the bones to make it easier to eat. In this way, we place importance on speaking to our customers through our food. We also offer seasonal seafood. In the spring, fresh raw shellfish and clams, in the summer, black-throated sea bream and purple sea urchin from Iwate, in the fall, kawahagi with liver soy sauce, and in the winter, grilled puffer fish with milt and Tempura.

The owner entered this world at the age of 18 and has had a career spanning nearly 30 years. When I was an apprentice, my master's policy was to ``master my role as a second person here'' and ``next time I would learn the job of a store manager.''He trained at several stores and was taught to hone not only his skills but also his humanity. He also has experience working at a hotel in Hong Kong, where he satisfies the locals, who are known for their foodies, as well as expatriates from various countries.
