The signature menu item is, of course, the Kuzu Cold Noodles. The soup is made by freezing the rich stock and turning it into a sherbet-like soup, which is characterized by its crisp, cold texture. This soup is combined with `` Cold Noodles'', a secret black Cold Noodles made with a unique blend of buckwheat flour and arrowroot flour.
