Matoi Ginza is conveniently located a 4-minute walk from Exit B6 of Ginza Station on the Tokyo Metro Ginza Line and a 7-minute walk from the Central Exit of Yurakucho Station on the JR Yamanote Line. The restaurant is located on the 7th floor of a building next to the Hyatt Centric Hotel, and offers cuisine made with Wagyu beef and seasonal ingredients from the mountains and sea, as well as a space where the skills of artisans shine. At Matoi Ginza, we purchase carefully selected Wagyu beef directly from producers, including branded Wagyu beef such as Kobe Beef, Matsusaka Beef, and Yonezawa Beef, and serve course meals using seasonal Seafood and vegetables. Using the highest quality ingredients purchased from producers all over the country, we offer a special dining experience in a quaint Japanese space where the skills of our craftsmen shine. When you step into the store, you'll be greeted by a spacious space finished with stone. There are 12 counter seats and a private room for up to 6 people, so you can enjoy your meal in a calm atmosphere. We were guided to counter seats and enjoyed a variety of dishes prepared by the chefs right in front of us. The content of the course I received is as follows. [Structure] We enjoyed a variety of luxurious dishes, including first bonito thighs that had been aged for a day, chateaubriand and sirloin of Yamagata Yonezawa beef. [Structure] Kitayori shellfish and wasabi are combined, and the sour and salty taste of plum brings out the shellfish, and the flavor of kelp is effective. The shellfish had a nice texture and a great flavor. [shabu shabu] shabu shabu with sirloin wild vegetables has a wonderful balance of sweetness and flavor of the meat and wild vegetables. The flavors of wild vegetables such as cod sprouts, urui, and kogomi enhanced the dish, and each bite was a new taste. [Boat] The bowl of clams made with Tokiwa clams and Sanriku wakame is a masterpiece that makes you feel glad you are Japanese. The texture of the Sanriku wakame and the flavor of the clams were in perfect harmony, creating a heart-warming taste of happiness. [Fried] Fried food made with tail, yuba, and fuburinoto Wagyu beef tail was a dish that you could enjoy with its unique flavor and texture. [Sushi] The hairy crab sushi was an exquisite combination of Hokkaido sea urchin and hairy crab, and the rich flavor that spread in your mouth was pleasant. [Katsu Sandwich] Chateaubriand's cutlet sandwich was a dish where you could really feel the flavor of the meat. [Ryogi] Ryogi using rice octopus and dokkatsu was a simple yet delicious dish that brought out the flavors of the ingredients. [Charcoal-grilled] The charcoal-grilled fillet was served with mojio, sudachi, grated radish, watercress, ohitashi, bonito and kelp soup stock, and soy sauce, and the pickled fresh pepper was a great accent. [Finishing rice] The finishing rice with cherry blossom trout, bamboo shoots, and rape blossom salmon roe was a luxurious dish packed with seasonal blessings. [Sweetness] The sakuramochi and milk ice cream we received at the end had a refreshing sweetness that made us feel satisfied after the meal. The food at Matoi Ginza was full of exquisite flavors that brought out the flavors of the ingredients and the skill of the craftsmen. I was able to spend a pleasant time in a high-quality space that is worth visiting on a special day in Ginza.
