東銀座か銀座駅から徒歩数分のところ、銀座シックスの裏の道沿いにあるビルに入ってるレストラン。
ベージュアランデュカスなどいろんな有名店にいらっしゃったあと銀座でル・シーニュをやってらっしゃった上野シェフが、去年オープンしたお店。
平日の夜に予約して伺いました。
お店は雰囲気バッチリのフレンチレストランで、個室と、横並びのライブ感あるカウンター席があります。
コースは29000円のショートコースト36000円のコースがあります。
この日は36000円コースをいただきました。
ペアリングをつけることもできて、グレードによって2種類あります。
全部で11品と小菓子という内容。
パンもおかわりできるし、どっしりした料理も出てくるのでボリュームとしての満足度は高いと思います。
ジャンルはフレンチですがとらわれない創作性もいろいろ。
メニューの名前が見ただけで全くわからないですがシェフがそれぞれの理由を提供時に説明してくれます。
パンにつけるバターは12種類から2種類選べるのが珍しいし面白い。
海藻のバターと唐辛子のバターをいただきましたが美味しかった。
少食の人はこれでパン食べすぎないように気をつけないといけないです。
スペシャリテのキャビアは生クリームと一緒に食べて濃厚さと塩気がマッチしてます。クリュッグもセットで出していただけるのが嬉しい。
オマールのアメリケーヌソースも美味でした。
お魚メインはきじはたで、焼き加減が良くてプリッとした身と皮目の香ばしさが美味しかったです。
メインのお肉は熊本あか牛の肩ロース。
噛みごたえがしっかりあって噛めば噛むほどお肉の味わいを味わえる。
デザートもトリュフアイスと、華やかな日向夏の2つでてきて満たされます。
モダンな要素もありながらどっしりしたフランス料理を感じることもできてとても良かったです。
