サラリーマンの街として有名な街新橋に店を構える「御料理 かつ志」さんに伺いました。
旧「鮨よしたけ」さんの店舗に2019年4月オープンされています。
アクセスは、都営浅草線、東京メトロ銀座線、ＪＲ等が乗入れている新橋駅より歩いて５分程です。
御門通りから路地を入った見番通りに面した建物すずりゅうビル 3階です。
店内は、和の空間が広がるこじんまりとした空間です。
高級感ある白木のカウンター席のみです。
食器は、店主の拘りで金沢の骨董品や、作家の作品を使用しているそうです。
本日いただいたメニューです。
○一番出汁
透き通った出汁は、五臓六腑に染み渡ります。
○河豚の白子の茶碗蒸し
玉子と出汁と濃厚な白子の相性が悪いわけがありません。
○子持ちのヤリイカと空豆
旨味のあるイカと食感の良い卵に上品な出汁が染み込みます。
