24歳でたかはしさんから独立して、昔の佐たけさんの場所に店を構えた崚。
初訪問。
技術的な部分や店内の感じなどは、当たり前のことを当たり前にやれている。
それが優秀な店かと言うとそうでもないが、この価格帯でも、グラスが生臭いとか、掃除が行き届いていないとか、当たり前のことができてない店はたくさんあるので、やはり優良店ということになるのだろう。
その当たり前の上に乗ってくるのが味。
率直に言うとツマミが弱い。
全体的にボヤけた味付けが多く、京都出身なのかな？と思うぐらい。
あまり日本酒に行きたくはならない、そういう感じの方が伝わるかも知れない。
あーここは合わないなぁとツマミで思ってると握りが始まる。
えっ！？めっちゃ美味いじゃん！となった。
はっきりとした味付けのシャリで、米の固さと酢加減が丁度よく、ガツンと効きながらもネタの邪魔をしない美味しいシャリ。
ツマミとの差がありすぎる。
ここが若さ故の迷いとかブレなのかなと思う。
たかはしさんもツマミが美味しくなかった記憶があるので、若くして独立したことによる伸び代かな。
このブレでこの価格帯では埋もれてしまいそう。
どんどん勉強して、どんどん自分の理想を追求していって欲しい。
また少し時間を置いて、変化を確認しに行きたいと思う。
