ChefMr. Ryo Sasaki
Born in 1996. Born in Chiba Prefecture. From an early age, he developed a love for living things, not just fish, and even as an elementary school student, he developed an interest in food as he tried to handle and cook the fish his father had caught. While attending Hattori Nutrition College, he began training at a famous sushi restaurant in Ginza. After six years of training, he set his sights on becoming a full-fledged sushi chef and became an independent chef with the desire to serve his customers the Edomae Sushi he created.
Food [Commitment to materials]
We go to Toyosu Market every day to find the best seasonal produce and purchase them. The tuna we use comes from ``Yamayuki,'' a reliable intermediate wholesaler specializing in tuna that is flooded with orders from famous restaurants all over Japan, including Michelin restaurants and high-end sushi restaurants in Ginza. Of course, we carefully select the ingredients for other ingredients as well.
Food [Commitment to Shari]
We use a unique blend of several types of red vinegar and specially ordered Yamagata rice for the sushi rice, and the sushi rice is finished in such a way that it supports the deliciousness of the toppings. We always try to provide nigiri at the best timing. Please enjoy the marriage of sushi and toppings.
