[Tabelog 3.35] ``Sushi Ryo'' is located in Ginza 8-chome, near Tsukiji Market. The head chef, Ryo Sasaki, has decided that if he were to become independent, he would try his hand at Ginza, a sacred place for sushi restaurants. Mr. Sasaki trained at Sushi Takahashi in Ginza for six years before going independent. In July 2020, he opened his own restaurant “Sushiko”. At the time, it became a hot topic as a sushi restaurant opened in Ginza by a 24-year-old sushi chef. Lunch during our visit was served by the friendly Mr. Fukasaka, who is currently preparing to start his own business. Mr. Fukasaka has trained at restaurants such as Sushi Takahashi and Sushi Hashimoto, and has also honed his skills at restaurants such as Sowado and Sakai Shokai, both of which I am a big fan of.He plans to become independent around March 2024. .
