[What is the original brand chicken Xiang Chicken?] Xiang Chicken is an original brand chicken that inherited the lineage of the "Buff Cochin" that was used for breeding Nagoya Cochin (Chiang Kai-shek liked the taste and moved it from China to Taiwan) The original breed is chickens, for which there is an anecdote that they were brought into the area. Xiang Chicken has its roots in Hsinchu, northern Taiwan, which is famous as a treasure trove of high-quality chicken. The original breed was inherited in 1988, and the previous president, Yasuhiro Matsumoto, successfully bred it in Japan. In addition, because the chicken has less of the odor that is characteristic of chicken, it can be eaten in a way that brings out the flavor of the ingredients without much preparation. At our restaurant, we offer dishes that take advantage of the special characteristics of Kodori chicken. |
2019年7月19日(金)昼食。
日本橋三丁目、中央通りの東側、養珠院通りのランチ。古寿茂の地下にある店。この店目立たないなあ。存在に気が付いていない人が多いと思う。
ランチはむね唐定食(750円)、もも唐定食(850円)、チキン南蛮定食(900円)など。香鶏という鶏の専門店らしい。(株)蔵王フーズという東京の会社の店で、今3店舗あるようだ。もも唐定食にした。
やがて出てきたその唐揚げの定食。一つ一つのピースは小さいし、ももと言ってもちょっと端っこのような肉が多いが、なかなかおいしい。若干揚げ過ぎだったが、ジューシーさはあったし、鶏肉の味も、濃いめの味付けも悪くなかった。
