Born in 1971. Born in Karatsu City, Saga Prefecture. Since his parents' home went to a cooking school, he was influenced by a variety of cuisines from an early age. He started running a food stall in Fukuoka at the age of 18, and over the past 30 years has opened nearly 100 restaurant around the world in a variety of formats, but he has chosen "Aged Sushi", which is managed by Daisuke Fujinaga of "Sushitsu**Currently Sushi Fujinaga". I studied under a strong influence. After that, he opened Fujiro in Kayabacho, Nihonbashi. Centered on the concept of ``sushi is unity,'' he is delving into new territory that interweaves aging and freshness.

The basic philosophy of Shin-Edomae sushi is fresh and juicy eclecticism and fusion of East and West. Shin-Edomae is Fujiro's unique serving method, which combines the characteristics and appeal of Edomae sushi, which utilizes aging techniques to maximize the flavor of fish, the freshness of Hakata-mae sushi, and Japanese Japanese-style meal techniques such as boiling, steaming, and grilling.
