ジビエが大好きなので、新しくオープンしたお店、どうだろうかと楽しみに期待して行った。
兄弟店のバルッチャも、料理は全て美味しいので、期待値は高かった。
その期待を超えて大満足だった。
鹿のロースは、濃厚なレバーのように滋味に富んでいて、雉は皮がパリッと肉はジューシー。添えられた生七味は、唐辛子の辛さに海苔の旨味が加わって、ご飯が何倍でもいけそうな美味しさ。
仔羊の骨付き肉は、脂が甘くむっちりとした肉質で絶妙な火加減。
最後に、ノドグロとクレソンのリゾットは、貝の出汁がきいたリゾットの上に炙ったノドグロの切り身が乗っている贅沢さ。ノドグロは口の中でとろけてなくなる絶妙な火入れで、飲み物のようにつるんと喉を通り過ぎた。
チーズの濃厚な味わいも重たくなりすぎない良いバランスで、最後に食べるときと途中で食べるときとで微妙に味付けのバランスを変えているという細やかなシェフの心遣いがあって、お腹がいっぱいなのに完食できてしまった。
おすすめのワインも料理によくあうセレクトで、気持ちよく酔っぱらった。
シェフの針生さんは、料理にゴールはないというスタンスで、常に前を向いて歩んでいきたいと言う。過去には散々失敗もあったそうだが、だからこそ今があるという、カウンター越しに良い話を聞けて、お腹だけでなく、心も満たされる素晴らしい時間を過ごすことができた。
雨降る渋谷の街中で、喧騒から離れた隠れ家ビストロ。自分だけが知ってる名店にしておきたいが、今日は公開で書き込みたくなった。おすすめ。
カウンターだけでなく個室もある。便利に使えそう。周りはホテル街なので、ちょっと行きにくいかもしれないが、そのおかげで隠れ家ぽい大人の空間になっているのだろう。
