Food Tuna aged for over 40 days
The grains are carefully exchanged every day in large chunks and slowly aged at the optimal temperature. The flavor is condensed deep into the tuna, the tendons are melt-in-your-mouth soft, and the fat is so sweet that it spreads throughout the tuna. What is important is the timing of ripening. Only a skilled craftsman can tell the degree of ripeness by using the ``tactile feel'' and finish at the best timing. The cut edge is a beautiful sparkling pink color. Enjoy the rich flavor of the tuna and the fat that melts the moment you put it on your tongue.
