It is made by stewing for half a day with plenty of aromatic vegetables and red wine. Tender cheek meat that has been simmered until it becomes creamy is served with a special sauce that is sharp, rich and crisp. This is Darbre's specialty.

Cassoulet, Local Cuisine from southwestern France that condenses the flavor of various parts of pork, has been a traditional masterpiece since its founding in 1974. Oven-baked pork, raw bacon, duck confit, sausage and stewed white beans. The sweetness of the steamy beans stands out against the simple seasoning of salt and pepper.
