Chef de Cuisine at Chez Matsuo before going independent=He started his career as a chef when he went to France by himself at the age of 15, working part-time at various restaurants in France. Restaurants After returning to Japan at the age of 19, he worked at the Michelin Guide 1-star Chez Matsuo Shoto and became sous chef at the age of 24.
