First visit in a year! A few minutes walk from the east exit of Ebisu Station. You enter a back alley and wonder, "Is this really the place?" The door looks like a back door? A side entrance for employees! You open it and there's a staircase. Going up the stairs, you'll find yourself in a space that feels like the living room of a luxurious mansion. The owner, chef and sommelier, Sakuraba-san, runs this place all by himself! We ordered the chef's selection course and, of course, the selection for drinks. This day, we were almost all Spanish wine! We started with a toast of Cava, and the appetizer was white fish. It was a very careful job. Delicious. The Verdejo from Rueda goes perfectly with the rape blossoms and white fish. The wakame seaweed on the sashimi plate was also incredibly delicious. We also had nigiri sushi and clams, and the main course was meat! It wasn't from Spain, but Chateauneuf-du-Pape from Villeneuve! I'll say it because Sakuraba himself said it himself (lol). As the name of the laboratory suggests, you can enjoy the world of cuisine and pairings created by this pervert who continues to research wine and Japanese-style meal.
