グルメ激戦区 恵比寿エリアで人気を誇る寿司屋。
いつもの突発的に寿司を食べたい衝動が湧き上がり、
元々気になっていた当店を急いで予約し訪問。
『ふじまさ』は当店を経営する会社の名前からきており、大将の名前は鎌田 研氏。
関西割烹から料理人としてのキャリアをスタートし、
その後板前へ転身、2020年10月オープンとまだ比較的若めの寿司屋です。
店内は檜造りのL字メインカウンター14席に個室カウンターも6席あり。
野球部出身の大将らしく、人当たりの良いハキハキとした性格で、一見で一人で伺っても居心地は保証されています。
米は福島県のコシヒカリを使用。
赤酢1種類に砂糖&塩。
大粒な米の旨みと深みのあるマイルドな酸味で、
好みがあまり分かれないどのネタにもバランスが良いシャリとなっています。
色々試行錯誤して行き着いたそう。
魚はかなりハイクオリティで、まずは仕入れてから考えるという太っ腹スタイル。
ピンネタをバンバン提供してくれ、絶対額こそ24,000円と高いものの昨今の物価高騰やクオリティ、立地などを考慮するともはやリーズナブルなのではと感じてしまいます。
勿論さすがに全部が全部ピンだと赤字も良いトコなので、鮪はボストン産を使用したりで調整。
この時期は変に拘って国産のものを使われるより、むしろ「あ、これボストンッス〜」くらいの潔さでいっちゃってもらえる方が良いパターンもある。
またコース全体で20品超とボリューミーであり、且つネタもとても大きいので、大食いの私でも大満足のディナーとなりました。
誰がどう行っても失敗しない、良い寿司屋だと思います。
