私鯛の子大好き♪
昔よく母が炊いてくれたな〜
・金目鯛
お鮨１貫目は4日寝かせた熟成金目鯛の炙り。
最初に金目鯛で炙りは珍しいね！
いつもは白身か多いらしい。
・墨イカ
歯切れを楽しむ
・自家製イカの塩辛
仕上げに炙った串で混ぜて、柚子を。
ちびちび食べながら日本酒をクイっと。
・フグの白子の春巻き

こんな贅沢な白子の食べ方初めてかも。

鰹出汁のあんに刻んだホタルイカと
うるいを入れたあんをたっぷりかけて。
ハマグリとか、カニとか、白子とか、毎月毎月内容変わるそうで楽しみだね。

さっきまで生きてたエビを味噌付きでボイル。
〆たばかりのエビだと味噌が流れでないんだって！
めっちゃ大きくて甘味もたっぷりで美味しすぎた。

盛り盛りのうに！！
最近うにの値上がりやば過ぎて大体追加だけど、
コースに入れてくれてるの嬉しい(^^)

塩と柚バージョンとタレバージョンの２種

コースのお鮨はこれで終わりで追加で
あじ、鳥貝、のどぐろ、

お腹いっぱいすぎて追加できなかったけど、
あの特大ボタンエビ食べたかった、、

めっちゃ最高でした！
大将ほんとお話し上手で全員のお客さん楽しませてて、
職人でエンターテイナーだった。
