ChefMasataka Yamashita - A Chinese genius who cherishes ingredients
He discovered the joy of cooking while working part-time at a Chinese Cuisine restaurant during his student days. After training at a number of Chinese Cuisine restaurants, including the famous Kaikatei (Gifu), he opened Wasa in Yakumo, Tokyo in 2009. After a stint in Roppongi, he restarted with the new Wasa, which opened in Ebisu in October 2020. His dedication to learning is also evident in the time he devotes to bringing out the maximum potential of ingredients, as he even went on training at the famous Ramen restaurant Iida Shoten during its closure.
Food Aesthetic sense hidden in unassuming, seemingly ordinary dishes
Gyoza / Dumpling, chicken with saliva, pickled mustard greens...none of these dishes are unusual, but it takes a huge amount of time and effort to prepare each dish. For example, the Chinese chives used in Gyoza / Dumpling filling are chopped finely and then wrapped in a different paper every four hours, bringing out the pure sweetness of the Chinese chives. Other unique flavors include pickled mustard greens sliced to 0.8 mm for a delicate texture and almond tofu made with as much water as possible to give it a fluffy finish.

There is no sign, and when you open the door that at first glance doesn't look like a door, you will find eight tables surrounding the kitchen where Chef Yamashita stands. As the seats generally face the kitchen, your eyes are naturally drawn to the chef's hands, and his careful work only heightens your expectations for the food. The wine pairings, which sometimes include a generous serving of high-end wines such as Grand Vin, are also popular.

... Yamashita's uncompromising work. With only eight tables surrounding the kitchen, this is a theater-style modern Chinese restaurant. The menu changes with the seasons, and the 10-plus small-batch multi-course menu is unconventional and well-known to all, but the effort and passion hidden behind it is unmatched by any other restaurant.
