鮨利崎。渋谷が有名ですが、こちらは価格控えめ。
見た目とても若く見える大将が最初から最後まで握ってくれます。大将一人でカウンターの全てのお客様のお寿司を握ります。大将はお客様を端から端までよく見ていらっしゃる。お客様の細かなところも意識してサービスを行おうとしている様子がうかがえました。また、握る舞台を堪能しました。
同時刻一斉にコース開始で効率化することで、無駄をなくしてコストカットでしょうか。お酢の控えて目なお寿司。切れ込みなど丁寧に処理して見た目も綺麗でした。コース8800円。つまみではなくひたすら握りを食べていきます。お酒は一通りアルコールがあり、日本酒は10種類程度。大将がお寿司にあわせてくれます。
他方、お店の方々に一体感は足りない気もしました。せめて舞台にいるサブの方だけでも、プロとして意識高く、お客様の目を意識した動作やお客様に注意を払いながら動けるようになれたら、一段お店は良くなるように思います。大将一人だけで頑張るには限界があるので、全スタッフがお客様を意識できるとより素敵なお店になりそうです。
店内は壁など一面黒くして照明や音楽などでスタイリッシュな高級感を出そうとしていました。カウンターで美味しい握りをゆったり頂けて良かったです。
