恵比寿駅から渋谷方面へ歩いて7-8分の場所にある「tTure（ティチュール）」。「セルサルサーレ（selsalsale）」とかあっち方面です。私はこちらの出入り口からお邪魔したのですが、逆サイドの通りからも入店できるのか、思いもよらない方向から新たなゲストが入ってくるのでびっくりしました。
店内は厨房に面した長いカウンター席があって、おひとりさまが結構多い。テーブルもいくつかあって、トータルでは30席弱といったところでしょうか。スタッフが明らかに足りておらず、非常勤のヘルプみたいな方が駆り出されていました。
お酒はそれほど高くなく、グラスワインは全て1,000-1,500円に落ち着きます。ビールも確か700円ほどであり、それでいて量もしっかりしており、当店のオーナーは相当な酒好きとみた。
幸水梨とストラッチャテッラチーズのサラダ。梨たっぷりストラッチャテッラたっぷりでデザートのようなサラダです。ちなみにストラッチャテッラとはブッラータの中身のトロトロした部分であり、イタリアではストラッチャテッラ味のジェラートが売られていたりします。パンはとても普通で主張を感じませんでした。ストラッチャテッラを添えればいいのに。
手羽元の照り焼きローズマリー風味。ややもするとジャパニーズ・アメリカンのテリヤキチキン的な味わいなのですが、ローズマリーの風味がきちんと活きており、ありそうでない料理です。温玉も付いて親子丼っぽくするのも面白い。
序盤に「スタッフが明らかに足りておらず」と記しましたが厨房についても同様で、この席数を料理人ひとりで回すのは明らかに無理ゲーでしょう。皿出しが遅いお詫びにチーズをサービスして頂けましたが、何とも座りが悪いです。
1時間待ってようやく登場したパスタ。太麺でガッチリとした歯ごたえがあり、麺そのものが旨い。たっぷり具材はサバ・トマト・レーズン・松の実で、サバの旨味とトマトの酸味でワインに良く合います。
以上を食べ、軽く飲んでお会計は8千円ほど。料理は旨く酒の値付けも控えめで私の大好きな方向性なのですが、だからこそこのテンポの悪さは勿体なく感じました。19-20時あたりのピークは外し、オープン直後（土日は15時開業！）や客足が落ち着いた夜遅くに訪れるのが吉でしょう。2次会に料理も旨いワインバーとしてフラっと訪れるのが一番クールな使用法かもしれません。
