Food Kasumi duck from Nishizaki Farm in Ibaraki Prefecture
Kasumi ducks are purchased whole at our store. Wait for it to grow instead of nurturing it. The lean meat, which has been firmed up through moderate exercise in a stress-free environment, has just the right amount of chewiness and is full of flavor. Cook each part of the meat and use it in the sauce without leaving any bones in it. Please try it once.
