池袋駅東口から出てすぐの好立地でした。
個室も完備ですが今回はカウンターでお任せコースを予約しての訪問です。
旬の握りと逸品料理のバランスが絶妙でした。
まずは季節の逸品から。
秋刀魚とさつまいもの組合せが秋を感じます。
続いての茶碗蒸しはズワイガニとクリームチーズの相性が抜群な新しい味わいでした。
握りは全８貫でした。
まずは愛媛の本鮪から。
シャリの温度はマグロのあぶらがとけやすい温度に合わせているそうで、
口の中で絶妙なハーモニーを味わえます。
その後漬けマグロやいくらの二色盛りやカマスの握りなど初めての一貫が続きます。
大将は比較的若い方とお見受けしましたが、
包丁さばきからカウンタートークまで絶妙で熟練された技術に裏付けされた方でした。
メニューの構成までご自身でされているとのことで、
穴子の握り等の伝統的な江戸前寿司の技術はもちろんのこと、
新しい握りへの挑戦とセンスに脱帽です。
伝統に裏付けされた技術に組合される新しいお寿司に満足感が高いコース内容でした。
