Participated in the 15th anniversary party of Brasserie Paul Bocuse Musée
[b:★Casual party in a celebrity space] Paul Bocuse is one of the world's best Restaurants that has been awarded three Michelin stars for over 50 years. This brasserie offers traditional Lyon cuisine from a three-star Restaurants at affordable prices. I was lucky enough to attend this 15th anniversary party. [b:★Extra-large course and wine pairing created by a passionate chef] First, toast with a gorgeous rosé. Started with three types of amuse bouche. Burgundy-style French escargot is one dish per person. What a luxury. After finishing the appetizers, I had a glass of white wine. This was my first time drinking Sauternes' unsweet white wine. This is my first experience of the deep richness of noble rot wine. Pairing with scallop poire risotto and oeuf pla with sauce Perigueux. The combination of rich risotto and Périgueux sauce creates a delicate yet deep flavor that, of course, would never be possible to make at home. [b:★Sudden food fight! ] The main dish is an unexpectedly large portion of half chicken. Black Satsuma chicken from Kagoshima prefecture stewed in red wine Coq au Vin! The chicken thighs are so tender that you can easily shred them with a fork and knife. There's also a breast part, so it's a fighting battle with half a chicken. The red wine to go with the main dish is Bordeaux, which is fruity but has firm tannins and a complex aroma, making it suitable for advanced drinkers. [b:★Desserts are also very filling] The final dessert is the old-fashioned gaufre “Grand Mer.” Waffles with lots of eggs and butter. Crème Chantilly/apple confiture/sauce and chocolate change the taste. Although I won the fight with the chicken, I lost my will to fight due to the heavy chocolate and cream. Regret..._| ̄|○ This time it was a commemorative course for 14,000 yen, but it was a wonderful experience with a luxurious space, delicious food, rare wine, and an incredibly full stomach. I skipped lunch and tried it, but this time I completely failed (in a good way), but next time I'll definitely eat it all! 常連さんのお誘いで、月一開催のワイン会に参加出来ました。
前菜からメイン、デザートまでの全4品とお料理に合わせてセレクトされたワインを楽しめます。今回は常連さんの計らいで、ワインも少しバージョンアップ。

ボリューミーでレアなワインが多く大変贅沢なひととき。
★ワインと合わせる品の良いお料理
最初のお料理は、冷たいミネストローネと小海老のベーニェ。やさしい前菜。
ハードなパンには、ポテトのペーストを。
甲イカのセトー風サフランライス添えは、じっくり煮込んだトマトソースは黒を帯び、酸味と煮詰まった旨味。
メインは、豚肩ロース肉のグリエ ローズマリー香るジューソース トウモロコシのビューレと南仏野菜のトマト煮込み。豚肩ロースはとても柔らかく、甘い脂身が溶け出します。
最後のデザートは、色々なナッツのタルト はちみつとパン・デピスのアイスクリーム。ナッツのタルトは食べごたえ抜群で、歯にいっぱい挟まりました。お恥ずかしい…。
★アンリアルな空間で優雅なひとときを
夕方から夜にかけて、ゆっくりと空の変化を大きな窓から楽しめる優雅なシチュエーションは時間がゆっくりと流れます。
自分へのご褒美に、心のゆとりを感じるために、またいつか訪れたいと思いました。

This project was planned to use ingredients from Ishikawa prefecture from the beginning, but it became difficult to obtain the ingredients, so we used the wines and ingredients that were available.
