六本木 『 鮨 かくの 』
六本木の喧騒から程良く離れた鮨店。
カウンター6席と個室。
大将と奥様が気持ち良く出迎えてくれる。
何とも心地よい空間。
一斉スタートでないのは有り難い。
日によって当日の予約も受けて下さるそうだ。
つまみは一つひとつが丁寧。
主張が激しすぎる料理は無く、酒や握りを引き立たせる丁度いい美味さ。
握りも良かった。
シャリは米酢、調整に使うのは塩がメインで砂糖は極控えめ。田舎寿司にありがちな重い上白糖の甘さは全く感じない。
米は富山のコシヒカリと山形のつや姫を独自にブレンド。小ぶりなシャリは解け感もあり、噛むと僅かに弾力を感じる硬さも自分好み。
かくのさん、良いお店です。
実は伺うきっかけは「鮨かくの」で検索すると出てくる一つのGoogleクチコミだった。
土産のトロたくが高すぎる、との事。
物の価値を知らず、自身の無知を棚に上げ散々店の悪口が書いてあったが、それに対し店側は真摯に理路整然とした態度で対応されていた。
また、写真を見てみると何とも美しいトロたく。巻物の高さが綺麗に揃い、折詰いっぱいに敷かれている。喜んで貰おうと腕を奮った大将の心意気が見て伝わる。値段も高いどころか、六本木の鮨事情を見ればかなりリーズナブルな印象。
これはきっといい店だ。
実際に伺ってみて大正解。
勿論トロたくは土産で頂き夜食に。
良い店を見つけた。
