グルメな知人からオススメと聞いて、気になっていたお店にようやく行けました！
六本木駅から徒歩２分ほどにある熟成肉で有名な格之進の肉割烹スタイルのお店です。
熟成肉×海鮮の繊細な和製サーフ＆ターフがいただけます。
メニューは、サーフ&ターフと門崎熟成肉を使用したしゃぶ焼きの１コース。
まずは、部位や調味料の違いを食べ比べできる門崎熟成肉を使用した前菜から。
サーフ&ターフのユッケ格之進スタイルは、手切りで粗く刻んだお肉に甘みのある雲丹を乗せたユッケ。
周りの野菜と黄身のソースで混ぜていただきます。
見た目も美しく、単体でもおいしい雲丹とお肉の組み合わせは抜群！
この日の料理長の気まぐれ小鉢は、ヒレ肉の酢味噌和え。
あっさりしたヒレ肉と酢味噌で、とってもさっぱり。
お肉と酢味噌って合うんだなぁと新発見。
もうひとつの新発見は、鰻をハンバーグで包んだうなはん！
鰻の味わいと山椒のアクセントも良かった〜。
こだわりしゃぶ焼きは、土鍋で片面を弱火でゆっくり焼き、お出汁をかけて、とすき焼きとしゃぶしゃぶの中間のような調理法で、お肉の旨味が口に広がります。
格之進82の料理長は、元々寿司職人だったそうで雲丹と蟹・いくらの3種類肉巻き軍艦は、とても美味。
毎月第1・3月曜日は、お寿司のイベントを開催しているそうなので、こちらも行きたくなりました。
上品で繊細な和の味わいを堪能できる素敵なお店です。
