ベテラン佐藤シェフの熟練の技術とセンスで
たまらない極上のコースに仕立ててくれました
白子や尼鯛等の和の素材を
フレンチの技法で、
味を丁寧に重ねつつも
素材の魅力を徹底的に活かして
どこまでも繊細で優しく
そして美しく仕上げた一品
シェフのプライドだけでなく
アートな品性すら感じられます
そして噛み締め味わうと
素直に美味しいという言葉があふれ出してくる
メインの和牛は
米沢牛等や田村牛等5種類から客が選びます
わたしが選んだ田村牛を
拘りの火入れで
60度で4時間丁寧に焼いてくださって
敢えて流行りのブロック状ではなく
表面のピンクが美しく映える平面カット
仕上げにたっぷりの白トリュフとほくほくの百合根
照明が暗め黄色めで
麗しいピンク色を十分に伝えることができず
申し訳ございません
いただくと、ナイフ入れただけで感じる
ただものではない柔らかさ
口に入れてみると、ほろほろとほぐれ
噛み締めるとあふれ出す旨味と甘み
