大好きなベーカリー、ラトリエデュパンの2階にあり、ずっと気になっていた六花へようやく訪問。
土曜日のディナーに白ソファのある個室を予約させていただき伺ったのですが、店内がとってもラグジュアリーで、可愛らしく、入った瞬間にテンションが上がりました。
この日のコース内容は以下の通り。
・長崎 五島列島放血神経締め熟成魚
4日間熟成させたメジマグロを赤身からトロの部分まで。
ねっとり濃厚で、カラスミやフルーツトマトと合わせて洋風に頂くのも新鮮でとっても美味しかったです♡
・高知 褐毛種土佐あか牛赤雲丹
・秋田 日本短角種かづの牛 オシェトラキャビア
・北海道 雲子 京湯葉 西京味噌
とっても大ぶりの白子と湯葉，西京味噌のお出汁のバランスが絶妙で、大ヒット!
獺祭と合わせて頂きましたが、最高の組み合わせ。
・兵庫 香住蟹利尻昆布
茶碗蒸し状になっていましたが、カニのほぐし身がたっぷり入っていて、ほぼほぼ蟹でした！
・山形 黒毛種米沢牛ハート 黄柚子
都内で米沢牛のハツが食べられるお店はここだけ？かもしれません。
臭みゼロで新鮮ぷりぷり！
・新潟 もち米 天然酵母 加水率105% 海藻
楽しみにしていた高加水のパンももちろん美味しい♡
・厳選極み和牛
こちらはコースが始まる前にお肉を選んだのですが、悩んだ末に高知県産の褐毛種、土佐あか牛にしました。
ボリュームたっぷりの150gのお肉にトリュフと百合根。
あか牛は赤身のお肉で食べやすさ抜群！しっとりジューシーな食感で、肉の旨みがつまっていて、いくらでも食べられそうなほど！
付け合わせのゆりねは、目を瞑って食べたらスイートポテト？と思いそうな程甘くて、これまた美味しすぎました♡
・〆の一品はカレー。
ゆめぴりかを使ったコクのあるカレーがとっても美味しい。
・デザートは10 年熟成白龍本味醂 ゲランドの塩と和栗 棒茶 グアナラ・ラクテ。
金木犀のお茶を合わせてコースが終了でしたがとにかく大満足の内容でした。
今回お料理に合わせてペアリングもお願いしましたが、ワインだけではなく日本酒も出てきて、それぞれのお料理に合うお酒がたっぷりと楽しめたので、お酒が好きな方はペアリングがおすすめです。
最初に頂く食材を持ってきてくださり、シェフが直々に説明してくださるパフォーマンスもとても楽しくワクワクしました。
店内の雰囲気も接客も、もちろんお料理も、どれをとっても本当に素晴らしかったので、ぜひまた伺いたいし特別な日に使うのにおすすめしたい素敵なレストランです。
