六本木交差点から徒歩30秒という好立地で、ランチも深夜も営業されている【鮨 無垢/鮨 白銀】さん。
平日の夜にペアリング付きのおまかせコースを。無垢さんの方は満席で、奥のラグジュアリーな雰囲気が漂う白銀さんでいただきました。
おまかせコースは
・季節の先付け3品:出汁キャベツ、クリームチーズ、湯葉。メリハリのある3種に引き込まれます。
・中トロのペアリング:中トロにうにを混ぜ、いくらが乗ったレンゲを一口で。ノンアルペアリングはクラフトコーラ。とろける……
・お造り:梅が入った出汁でいただくヒラメのお造り。出汁との相性抜群
・酢の物:沖縄県産もずくと山芋
・水蛸の握り。ぷりぷりで旨みもあり、コースの中でベスト1,2を争うほど美味しかった。
・季節の一品:アスパラ、ヤングコーンの白身魚のあんかけにいくら添え
・真鯛の握り:たっぷりな醤油に負けないくらい旨味が詰まった真鯛
・カマスの握り:炙ったことで香ばしく、ふわふわ食感に
・名物！蒸し鮑トリプリング:蒸し鮑をバターミルクの濃厚さを感じるソースにくぐらせ、最後は獺祭にしようさらている酒米を炊いたものでリゾットに。おかわりしたいくらい美味しかった！
・帆立の焼き浸し:柔らかく繊細なのにしっかりと旨みが引き立つ帆立
・生本鮪の握り:中トロのペアリングと同じくらいホロホロで溶けていく鮪
・季節の小丼と特製出汁:たけのこご飯とわらびの出汁。半分食べ終わったら出汁をご飯にかけてお茶漬けに。
・こはだの握り:酸味と旨みがちょうど良く、身が引き締まっていて美味しい！
・本鮪赤身漬けの握り:熟成された漬けの旨みがギュッと凝縮
・銀鱈の西京味噌焼き:小さくても存在感のある銀鱈と、きゅうりのわさび漬けと沢庵
・クエの握り:蒸したクエは、淡白だけど食べ応え十分
・穴子の手巻き:パリパリの海苔とふわふわ穴子がばっちり
・しじみのお吸い物
・玉:スイーツのようにいただける甘めの卵焼き。ペアリングは甘酒
福島県産コシヒカリを硬めに炊き上げ、愛媛県の熟成赤酢を混ぜ合わせたシャリは、鋭い酸味と深いコクが特徴的でした。
全22品という豪華なコースは、旬なネタやおつまみばかりでどれも美味しかったです。友人の日本酒ペアリングのクオリティも非常に高そうで、お酒好きなグルメにはたまらないなと思いました。産後に再訪したい！笑
