Food Specially selected dashi stock brings out the natural flavor of the ingredients
Seasonal ingredients are sourced from all over Japan, mainly from Toyosu. The amber-colored Kyoto-style dashi, made with 40 years of dedication, brings out the delicious flavor of the seasonal ingredients carefully selected by the owner. The dashi is carefully made from selected ingredients such as Rishiri kelp and dried bonito flakes from Makurazaki, bringing out the inherent flavor hidden in the ingredients. Please enjoy the true "ripening time" that can be determined and brought out precisely because we work with ingredients every day.

Inspired by a popular TV drama set in a traditional Japanese restaurant, the owner jumped into the world of cooking and has been dedicated to Japanese-style meal for about 40 years. After training for 15 years at the Akasaka restaurant "Kakyotei," he was involved in the launch of several restaurants and opened "Azabuhide" in 2009. The dishes, which are made with attention to detail and feature the flavor of the ingredients brought out by the dashi broth and the techniques he has cultivated, are masterpieces. We look forward to welcoming you to our restaurant, where you will enjoy a special time with the warm hospitality of the owner, as well as the ingredients, space, and tableware.

Our restaurant is located in a back alley, about a two-minute walk from Azabu-Juban Station. Once you pass through the noren curtain of this hideaway-like restaurant, you will be greeted by a warm Japanese space. Sit at the counter made of a single slab of elegant plain wood and enjoy the soft warmth of the wood as you savor the exquisite taste of our traditional Japanese cuisine. One of our special features is that the private rooms overlooking the small garden are decorated with seasonal trees and flowers, allowing you to feel the changing of the seasons even while indoors.

The owner, who learned cooking at a long-established Japanese restaurant, has chosen this combination of natural wine and Japanese-style meal. Wine has a long history, is produced all over the world, and has a wide variety of characteristics. And Japanese Cuisine, which has been selected as an intangible cultural heritage and uses a variety of ingredients from the ocean and mountains, rich in nature, giving you a sense of the changing seasons.
