知人行きつけのお店です。
たまに一緒に顔を出させてもらってます。
本日はランチ使用。
スターターは牛蒡のスープ。表面がカリッと焼かれたフォアグラが入ってます。牛蒡は土臭くなくて香りが最高。フォアグラはあまり好きじゃないんですけどサイズがちょうど良くて臭みがなく好きになったかもしれません笑。一口サイズのカプレーゼ。とまとの酸味と甘みをうまく出すビネガーとチーズの割合!なんちゃらひらめのカプレーゼ。ビーツがいい感じです!
次、、なんて言ってましたっけ。なんちゃらってお野菜を焼いてバーニャカウダソースで食べます。程よい火加減で香りもいいですし、自家製のパンチェッタの塩加減と焼き加減が良い良い♪
タリアテッレ。タリアテッレなので太麺なんですけど、薄いんですね。芸術だなって思います。九条ネギ合います。白トリュフのリゾット!サイコーサイコー!臼削りなのに香りが優しい。トリュフの臭みが全然ない。トリュフってほんと美味しいか不味いかのどっちかだと思うんですけどね。ここのは表現し難いおいしさ。リゾットとよく合いますね。
メインは猪のロースト。ジビエ苦手なんですがこんなに美味しくてくさみのない猪初めてです!昆布締めにしてから焼いてるそうですが、これまた食べたいです。太らなそうだし。
ドルチェはあんまりわたし好みではなかったです。
シェフの料理に対する姿勢が素晴らしいお店だと思います!決してサービス上手じゃないですが、色々お話を聞いているうちにこの味はこのシェフでこそ出せる味なのかなぁと!
ランチでこの値段は一瞬たじろぎますが原価率を考えたら当然と思います。雰囲気だけ楽しみたい港区のおねーさんやおじさんではなく味を楽しめる人に行ってもらいたいお店です。
