日曜ランチの一斉スタートのコースをいただきました。
ナオキさんのこだわりが細部に詰まった渾身のコースでした。
●牛蒡のスープ
フォアグラが細かくカットされていて、牛蒡の旨味とフォアグラの旨味がマッチした絶品スープでした。
●カプレーゼ
えっ?これがカプレーゼ?
と思うくらいの衝撃的な一品。
ブラッターチーズがトマトによく合います。
●水蛸とビーツ
ビーツが生というところが柔らかく煮た水蛸との相性がよいです。
●猪肉の赤ワイン煮込み
ほろほろと崩れるほど煮込んだ猪肉。
ザワークラウトと共にいただきます。
●トレネッテ
スモークめかじき、ナス、トマトソース、そして、アクセントにブロッコリーとケールを掛け合わせた野菜が入っています。
トレネッテもアルデンテで、塩加減もちょうどよく最高。
●リゾット
オレンジカリフラワーの素揚げが入った、豚と煮込んだリゾット。
白トリュフを仕上げにかけていただきます。
今年は豊作だった白トリュフ、香りがいいですね。
●十勝牛のいちぼ
生胡椒と共にいただきました。
結構歯ごたえがありますが、じっくりと周りから火入れしているので、優しい甘味を感じます。
●モンブランのセミフレッド
全体で完成された秋を感じる一皿でした。
●エスプレッソとデザート
八丁味噌の生キャラメルが添えてあり、これが絶品。
