2024: Special Matsusaka Beef Course by Keishiro Hata *Reservation required15dishes
This special course is made up entirely of specialty Matsusaka beef produced by Hata Keishiro, who has a proven track record of winning the grand prize many times over generations at the Matsusaka Beef Competition, which determines the best specialty Matsusaka beef in Japan. Specialty Matsusaka beef is made from carefully selected calves around 8 months old from Hyogo Prefecture, particularly the Tajima region, that are fattened for a long period of time of over 900 days (approximately 38 months or more in terms of age). Generally, fattening cows for a long period of time involves more costs and risks than usual, so specialty Matsusaka beef is raised by experienced farmers using secret artisan techniques to carefully raise each and every cow. In the sense that the cows are "aged alive," it is also called the "ultimate aged beef."

D-29 offers meat as part of the course. The quality and quantity of meat we can provide will vary depending on your budget and the price of the course. We can prepare meals according to your requests, such as your favorite cut of meat, how you would like to eat it, or the amount of meat in the course being of higher quality than the usual amount. Even if you don't have any preferences and leave it entirely to us, you can still enjoy meats carefully selected by D-29, such as fillet, tongue, skirt steak, and lean and marbled Kuroge Wagyu beef. If you have any other requests, such as chunks of meat, steak, rare offal, hamburger steak, or seared yukhoe, please let us know in advance. Please check out our Instagram for course references!
