This sushi restaurant is located a short walk from Akasaka Mitsuke. There is only a counter inside the restaurant, and photography is prohibited. The chef and his wife are the only two who handle the sushi. I thought there would be a sense of tension because photography is prohibited, but the chef and his wife created a wonderful atmosphere and a warm atmosphere. The food was left to the chef, starting with the appetizers and nigiri. The appetizers were not elaborate, but simple ones such as sashimi and marinated tuna. However, they were very delicious and I felt their philosophy of not doing anything unnecessary. The nigiri sushi is said to be sinking sushi, as the rice contains air, so it sinks under the weight of the ingredients as soon as it is placed. When you put it in your mouth, the rice is very light, and with one bite, the rice spreads throughout your mouth. It was my first time experiencing such a sensation, and I realized that it is full of skill. I was asked to remove the shiny nigiri, so I had sea bream, shrimp, ark shell, squid, red meat, medium fatty tuna, otoro, clams, sea urchin, and conger eel. The rolls were kappa and kanpyo. Finally, egg. It was just delicious. The tuna was especially good. It had a very delicate taste and was light on the fat, but packed with flavor. It was cut in a very clever way, giving it a texture I'd never tasted before. The clams were also outstandingly delicious. They were lightly seasoned, but brought out the best flavor of the clams. When I spread the sweet tsume on top, it looked beautiful, and they were the best clams. It was my first time eating such authentic sushi, but I was very happy to experience sushi made with such skill.
