ここ数年で流行りのイノベーティブ•フュージョン。
料理に国籍や定石を取っ払い、シェフが自由に表現/創造する新たなカテゴリです。
聞き馴染んだ言葉でいうと「和洋創作」なんかがありますが、「イノベーティブ•フュージョン」の方がスタイリッシュな印象を受けますね。
【料理】
Specialites du Chef のシャンパン、赤白ワイン3種のペアリング付きコースにて予約。
コース途中にて温かいバケットと「トリュフオイル」＋「塩3種(ハーブ/レモン/炭)」来ます。個人的にはハーブ塩にトリュフオイルを垂らして嗜むバケットの組み合わせが絶妙でした。温かいバケットがゆえに更にトリュフの香りを更に引き立たせてくれます。試験管に入った塩とスポイトで垂らすオイルというのがとてもお洒落でした。
■美酒 福島県 白桃
食前酒は本来、ディナーを楽しむ前に度数の低いアルコールを飲んで胃を刺激させて食欲を唆らせる為にあります。今回は白桃の甘さが際立つソルベとなっている食前酒でした。勿論、隣でシャンパンも注がれています。
■始まり 福島県 帆立
夏の夜の一品目として相応しい爽やかな料理でした。
■収穫 露地栽培有機野菜
オリーブオイルで軽く素揚げした香草パン粉が散りばめられてあり、このサクサクした食感で野菜を楽しめます。
■薫り フランス ホロホロ島
スモークの煙を蓋をして包んだ状態にてテーブルへ。食欲とワイン欲の唆る素敵な逸品でした。
■食感 宮城県 真鯛
とてもアーティスティックな逸品。真鯛の皮目はパリっと仕上がっており、ホクホクした身の方と楽しみます。全く見た目が同じの黒いソースが2種類と付け比べをして頂きました。
■恵み 鹿児島県 黒毛和牛4%の奇跡
あまり詳しくはないですが、4%の奇跡とは恐らく、「歩留まり等級最高のA」「肉質等級最高の5」、所謂A5ランクの中で「BMS最上位10-12」を指しているものと思われます。
