ChefYuji Kobayashi: Expressing the essence of Japanese Cuisine on tableware
Born in Ibaraki Prefecture in 1976, he was inspired by the tableware of "Suda Seika" while attending culinary school and started collecting them. After graduating, he trained at long-established restaurants such as "Kiccho", and was put in charge of the kitchen at a Ginza restaurant in his early 20s. Using his solid experience cultivated over the years and the many pieces of tableware he had collected as a foundation, he opened "Seika Kobayashi" in Roppongi in 2009. Since moving to Arakicho in February 2016, he has continued to show off his skills every day, putting the satisfaction of his customers first.

Based on the idea that "there are only a limited number of truly delicious ingredients," six different types of ingredients are used throughout the year. For grilled fish, seasonal ingredients from among bonito, tilefish, cherry salmon, hairtail, eel, and Spanish mackerel are served "grilled with salt" to bring out their flavor to the fullest. Regardless of the place of origin, only the best ingredients are selected by visiting the market every day. This is why they make the most of them with extremely simple cooking methods that are completely waste-free. We hope you will enjoy the "real deliciousness" that can only be tasted here.
