乳製品okなビーガンのラクトオボビーガンのお店です。
大通りから一本入った坂をのぼった所にお店がありますが、周辺にはお店がなく閑静な住宅街の中にポツンと佇んでいてまさに隠れ家。
ノンアルコールのペアリング付きの野菜のコース11000円を頂きました。
頂いたのは
⚪︎トマト
トマトとパプリカのテリーヌ。テリーヌの下にはソレル。ソレルはハーブで葉がやわらかく酸味があります。
⚪︎ピーマン
焼いたピーマンに野菜のピュレを詰めて。付け合わせはツル紫とモロヘイヤ。ピーマンはこんがり香ばしく中のピューレはスパイシーでエキゾチックな味。
⚪︎牛蒡
丸いお団子状のものが2個。お団子にはパセリがささっていて見た目ミニ盆栽みたい。1個はきんぴらをペーストにしたもので周りには青のりが。2個目はかぼちゃのペーストで周りは抹茶が塗されてます。
⚪︎空芯菜
空芯菜と木の子の中華炒め。ゴルゴンゾーラ添え。中華炒めはピリ辛で味付けしっかり。ゴルゴンゾーラと和えて頂くと味変に。
⚪︎ブロッコリー
焼いたブロッコリーとカリフラワーに野菜のコンソメスープ。色が出ないトマト以外の野菜の出汁に醤油を少し足して。焼いたブロッコリーは歯ごたえがあり優しい甘さが。
⚪︎茄子
ハーブを纏わせた茄子にブルギニオンバター、マッシュルーム、人参、玉ねぎを焦がすまで炒めたペーストを合わせて。付け合わせはスベリヒユ、リンゴジュースで炊いた水茄子、新玉ねぎの上にとうもろこしのタルト。
⚪︎ビーツ
ビーツは低温でじっくり火を通しバターとニンニクで焼いてステーキに。赤ワインとビーツの皮を煮込んだソース。付け合わせはビーツの茎と葉っぱ、ヨーグルト、すりおろしにんにくを和えたもの、ケール、オクラ、ムラサキキャベツのクミン和え。
⚪︎発酵乳
カルピスで味付けしたフローズンヨーグルト。ソルダムのソースがけ。
野菜だけですが味付けもしっかりしてるので食べ応えあります。調理法も工夫されてるし一捻りあるので驚きもあり楽しかった！ペアリングもお料理とマリアージュされてて良かったです。
ボリュームあるのに身体が喜ぶヘルシーな野菜料理は食べ過ぎた胃を休めるのにピッタリでした！
