〝チンゲンサイトクーシンサイノアーリオオリオ〟
まるで呪文みたいね!! ヨーコさんは笑う。
〝青梗菜と空心菜のアーリオ・オリオ・エ・ペペロンチーノ〟のことだ。
スペインやイタリアの料理が旨いのは新大陸から入って来た唐辛子(ペペロンチーノ)の香辛料とトマトの旨味成分のお陰だ。イタリア人は唐辛子を〝ペペ〟と愛情を持って呼ぶ。
千駄ヶ谷の国立競技場と明治神宮野球場を眼下に見下ろす四谷がの小高い丘の上にある「polyphony(ポリフォニー)」。野菜料理のレストランだ。オーナーは、竹口敏樹さん。四谷三丁目にあった「酒徒庵」や「鎮守の森」の店主として有名。日本酒の教科書まで書いてしまうその知識と唎酒の能力は卓越している。
その竹口さんが牡蠣料理の人気店だった鎮守の森を離れ、一転してベジタリアンの店を造ってしまった。しかもそれまで料理人がいたのに自ら調理。
ヴィーガン料理と言えば、肉や魚などの動物の食材は一切使わないベジタリアン。しかも動物由来の乳製品も卵も使わない。基本五味とは料理の美味しさを構成する「甘味・塩味・酸味・苦味・うま味」のことである。辛味や渋味は痛覚で五味には含まれない。ところが五味以外、最近言われている第六基本味が「油(脂)味」。この油味が料理では重要な役割を果たしている。それでヴィーガン料理発祥のイギリスやヨーロッパでは動物由来の「乳製品」や「卵」を使用した野菜料理〝ラクト・オボ・ベジタリアン〟が主流。これも呪文(笑)。竹口さんの野菜料理もラクト・オボ・ベジタリアンだ。
ポリフォニーは、従来の日本酒の他に、ワインやお茶や野菜ジュースなどのノンアルとのペアリングも提案。時効だけど高校時代から工場長に見込まれてウィスキー工場でブレンダーをしていた驚異の舌がなせる味だ。
