The monthly course menu consists of an appetizer, a hot plate, a bowl, a freshly prepared dish, a fish dish, Meat Dishes, a meal, and a dessert. (Courses without bowl, meal, or dessert are also available). Ingredients that are not often used in Japanese-style meal, such as cumin and coriander, are boldly used. Rather than trying to be strange, everything is an effort to create "more delicious Japanese Cuisine." We believe that the essence of Japanese Cuisine is to ``bring out the charm of ingredients to the fullest'' by sparing no effort and wasting as few ingredients as possible.

"Shiuga's Japanese-style meal" is a cuisine that brings out the salty taste through the taste of each ingredient and carefully prepared soup stock, and does not rely on salt, fat, or umami seasonings.
