Echigoya Kibe offers a selection of excellent dishes that go well with alcohol, with a focus on dried fish. We especially recommend the 2-piece sashimi platter of five different kinds, which uses their signature fresh fish. The fresh fish procured that day is carefully selected from "delicious seasonal ingredients" regardless of origin. It is characterized by its plump flesh and melt-in-your-mouth texture. We offer high-quality sashimi at reasonable prices, including bluefin tuna sashimi, amberjack sashimi, and red sea bream sashimi.

The dried fish we are proud of has an irresistible texture, with crispy skin and fluffy flesh. What creates this exquisite texture is ``charcoal-grilled Binchotan charcoal''. The flavor is condensed by grilling it all at once over a ``high flame.'' You can enjoy the most delicious part, just barely cooked from raw. We especially recommend [Kinka mackerel] and [Herring opening], which go well with alcohol. Dried fish packed with flavor is truly a delicacy from the sea. Please try it once.

We purposely do not set a fixed menu, and always have about 5 to 6 types in stock, depending on the season. One of the things I look forward to is being able to taste the seasonal sake each time I visit. We also offer 2-All-you-can-drink course (for drinks only), as well as courses that include a popular fresh fish menu and all-you-can-drink options.
