この日は四年に一度の閏日
ニクの日ですが神楽坂でお鮨です。
元祖大人の街神楽坂
佐賀県出身の大将が握るお鮨屋さんです。
大将の食材に対する拘りは単なる美味しさの
あくなき追求だけではなく、人間のDNA
レベルからの健康を意識した食材選びに
とても驚かされます。かなりの研究と勉強を
積み重ねて、突き詰めて、たどり着いた
健康になれる美味しさ！を実感です。
具体的には、グルテンフリー素材や
水に拘り、甘味には自然の甘みを使用。
漢方も取り入れるなど、このようなお鮨屋さんは
初めてです。
竹で包まれた空間は清々しく、まるでお正月の
ような和の雰囲気です。
佐賀県の有田焼のお皿も美しく、お料理も空間
も時間も全てが芸術です。
スペシャリテの雲丹の手巻きは

和食とは思えない
* 蟹出汁巻き玉子（鳥取県天美卵）大根おろし

使用 染みわたる旨味 これは上品です。
■甘未
・かぼちゃと百合根のパンナコッタ 苺とキンカン ベリーソース キンカンと苺のハーモニーが見事です。
口に中が爽やかで食後に余韻に浸れます。
