Akira Tagome is the head chef at the counter-style Restaurants run by chef Yoshiaki Ito, owner of L'ARCHESTE in the 16th arrondissement of Paris, France.He trained in France for two years starting in 2010, and worked with chef Yoshiaki Ito during his training in France. He also studied at the Jardin des Sens in Montpellier, southern France. Previously, he served as head chef at Hiramatsu Kodaiji Temple in Kyoto for three years. Earned one Michelin star in the first year. The year before he opened Retail, he studied at L'Arquest in Paris. While using classic French cuisine techniques, our dishes make use of unique and wonderful ingredients born from relationships of trust with producers. We provide expressive dishes using firewood, charcoal, and straw in key areas. Next to the seats is a walk-in wine cellar that can hold over 2,000 bottles. The wine list has around 400 varieties, mainly Burgundy wines. Apart from the counter kitchen, we also have a private space that can accommodate 2 to 6 people. |
