Food `` selection course'' consisting mainly of carefully selected seasonal ingredients
Our only course is the `` selection Course,'' which consists of about 22 nigiri and dishes. We pay close attention to the seasonality of the ingredients and prepare the best dishes available at the time. In particular, the tuna is purchased from specialized wholesaler Naito. Please enjoy the top-class tuna at Toyosu Market, which is impossible to find in this price range.

We use Yokoi Jozo's red vinegar for the sushi rice to create a sushi rice that brings out the flavor of the toppings, and we use carefully selected seaweed from Saga Prefecture from Marushin Shoten for the seaweed. These ingredients are also used in famous Michelin restaurants, making them difficult for new entrants to procure, but we have been able to provide them with overwhelming cost performance using the purchasing routes that we have as a manager with a background in famous restaurants.
