両国駅から国道14号を西に5分、両国橋の畔で十代続く『しし鍋』の老舗ももんじやは創業が1718年というから、300年以上の歴史がある元祖ジビエ料理店です。
国道沿の壁面には3頭の猪の毛皮が吊るしてあり、これが当日の食材のようです。
お店に入って帳場で予約名を伝えると仲居さんが2階の座敷に案内してくれました。
コースを予約しておいたので、すぐに猪鍋を作り始めてくれました。
鉄鍋に深紅色した赤身と白い脂身が特徴の猪肉を敷き詰めて味噌ダレをかけてガス火を点火して、ゆっくり時間をかけて煮込めば煮込むほど脂身に味がしみ込み深い味わいになるとの事です。
鍋が煮える迄の繋ぎに、鹿刺しと先付が出て来ました。
鹿刺しは臭みも無く噛めば噛むほど甘味が出てきて美味しい。
先付は鹿肉のローストと猪肉のチャーシューでビールのつまみにぴったりでした。
猪鍋の肉に火が通ったところで野菜や豆腐、白滝、せり、ネギを載せてすき焼き風に煮えたら完成です。
熱々の猪肉は、味噌ダレが染み込んで美味しい。
アルコールはビールと日本酒1種と冷酒300mlだけなのが残念でした。
料理に合わせて色々な日本酒を楽しむことができると、良いのになあと思いました。
