During the Edo period, eating soba was considered therapeutic. At that time, soy sauce was still at a premium, so people ate miso with grated radish soup called ``Edo soup.'' Our store, where you can enjoy Edo soba, a food culture that took root in the Edo period as medicine and food, is attractive because it uses 100% domestically produced soba flour in-house, and everything from grinding to making it is done in-house. Please note that the type of soba varies depending on the season and production area. Currently, they are using "Hitachiaki Soba" from Kanasago, Ibaraki Prefecture.
