This is a Japanese-style meal restaurant in Tsukiji. It seems to use ingredients from Niigata. I visited at 12 o'clock in the afternoon, and in addition to the counter, there seems to be table seats in the back. I sat at the counter. The restaurant is run by one person, so the food is served a little slowly. The menu has a variety of grilled fish dishes, including sauce cutlet bowl. I wanted to order miso-boiled mackerel, but it was sold out, so I ordered sauce cutlet bowl for 950 yen. The food was served in just over 10 minutes. The sauce cutlet only had three cutlets, so the cutlet was a little small. There were two chicken cutlets and one tonkatsu. The chicken cutlet was a red chicken breast cutlet, and the meat was not bad, but the condition of the frying oil was a concern. The tonkatsu was made with snow-aged pork, and it was as thin and crispy as potato chips. There were only three cutlets, and one of them was like this, so it left a bad impression... I had high hopes for the rice, which is made with Niigata ingredients, but it was a little too soft and not grainy, and the flavor was average. The rice has no uniform texture and is not cooked well enough to be a selling point. I think the problem lies more in the storage and cooking method than in the quality of the rice. The portions are generous and you can have refills. It's under 1000 yen, so it's pretty average for the price. The pickles with a yuzu scent are quite good. The miso soup is salty and tastes like Echigo miso, but it doesn't have much of a dashi flavor. I may be being a bit harsh because the restaurant name is Uonuma and they're promoting Niigata ingredients, but the sauce cutlet bowl is far from the sauce cutlet chains you often see these days. Maybe the fish would have been better after all.
