東京出張、月島でもんじゃ焼きを食べようと思い『月島もんじゃ こぼれや 結』さんを予約して訪問しました。
こちらの店は『食材・調味料等あらゆる素材を全国各地から厳選し取り寄せしており、 もんじゃの味を引き出す揚げ玉は、 ミシュランビルグスマン掲載の銀座名店から取り寄せ。 出汁は豚骨ベースとし十種類の素材を使い、 旨味を追い求め科学的な検知からも "おいしい"を実証するため徹底的に研究。 旨味成分(アミノ酸)の分析を行い、 旨味の最高値となる組み合わせを実現しているとの事です。

もんじゃ焼きこぼれや
豊洲の仲卸業者から仕入れた新鮮な海鮮（赤海老・穴子・牡蠣・帆立・あさり・いかげそ）をあふれんばかりに盛り付けられていて見た目映えます。
店員さんが作成してくださり、ヘラをカチャカチャと動かし具材をカットするライブパフォーマンスを楽しめます。
牡蠣・帆立・海老・穴子など具材の旨味を感じる上品なもんじゃ焼きで、50種類の中から究極のウスターソースである”蛇の目ソース”を採用しましているそう。 蛇の目ソースは生野菜をふんだんに使ってじっくり煮込んで作られており甘が強く、「京の手づくり濃厚ソース」というネーミングにたがわぬ味わい。
今まで食べた事の無い、上品な味わいのもんじゃ焼きでとても美味しかったです。
昔ながらの豚天
こちらも店員さんが手際よく調理してくださいます。
口の中でとろけるようなフワフワのお好み焼き。ソースの味わいは控え目で出汁の旨味を感じるのはもんじゃ焼きと同じ。いやー、旨い。
