[Traditional mapo tofu that was founded in Chengdu, Sichuan Province in 1862]
The tofu that is the lifeblood of mapo tofu is made from firm tofu made only from domestic whole soybeans and natural bittern, which has a strong soybean flavor that does not overwhelm the strong flav
...or of mapo tofu. The spice is Hua Jiao, which has a refreshing aroma and a pungent spiciness that numbs the tongue, and is a blend of top-quality aged Pishen bean paste, which is the key to the flavor, and young bean paste, which has a beautiful red color. Mapo tofu is delicious on its own, but we also serve it with domestically produced rice that has been cooked until fluffy.
