After traveling to many islands in Japan, I suddenly decided to go to Amakusa, Kumamoto Prefecture. The moment I visited and ate my first fish sashimi, a shock ran through my entire body, as if I had been struck by lightning. Since then, I have visited the island many times and realized that it is a treasure island where fish, vegetables, meat, salt, alcohol, rice, and seasonings are all available on the island. At our restaurant, we will convey the charm of the island through Amakusa's seasonal ingredients. We will also introduce local ingredients that you cannot taste in Tokyo.
